puran poli recipe:-

for the dough of the puran poli:-


1.  I take a deep bowl and add the whole wheat flour to it.
2.Add the oil to it.The oil adds softness to the dough.

3.Knead into a soft dough using approximately 1 cup of water.Always add water little by little as excess Water will make the dough Sticky and extra soft which will Make it Difficult To roll.
4.Divide the dough into 15 equal portions and keep aside.

For the filling for puran poli:-

1.I wash the toovar dal very well atleast 2to3 times in enough water.
2.Drain the dal and keep aside.
3.In a small bowl,put the saffron.Saffron or kesar not only gives a winderful color but also gives a unique Taste to the filling.
4.To this add 2 tsp of warm water and rub saffron.By doing this,we are releasing the color from the Saffron.Keep aside for 15to20 minutes.
5.To make the filling the of the puran poli,in a pressure cooker,add the toovar dal.This is a Gujarati style puran poli Which uses this Dal But Mahtatrians make It with Chana dal.
6.add 1 1/2 cups of water.
7.Mix well and pressure cook for 3 whistles.
8.Allow the steam to escape before opening the lid.This is very important  as otherwise the dal won't cook properly.
9.Take a broad non-stick pan and heat the ghee in it.Ghee gives a wonderful flavor to the puran poli.
  
10.To this,add the dal.
11.Now add the jaggery.You can use sugar as well but jaggery is the traditional way of making it.
   
12.Mix well.
13.Cook on a medium flame for 10 to 12 min or till the mixture thickens,while stirring Continuously and mashing at regular intervals.You know it is Cooked when the mixture starts leaving the pan.
14.Now add the saffron-water mixture.
15.Mix well to incorporate.
16.Transfer to a plate and let it cool slightly.
17.If the mixture shapes into a ball without sticking to your hand,if it perfect.

How to proceed for the puran poli:-

1.Roll out one portion of the dough into a 100 mm.(4")diameter circle using a little whole wheat flour for rolling.
   
2.Place a portion of the filling in the center.
3.Fold the edges of the dough over the filling.
4.Pinch the edges together to seal the filling.
5.Flatten the dough and roll again into a 100mm.(4")diameter circle,using a little whole wheat flour for rolling.
  
6.Cook on a tava(griddle)over a medium flame,till the puran poli turns golden brown in colour from both the sides.
  
7.Repeat with the remaining dough and filling to make 14more puran poli.

8.Smear a little ghee on each puran poli and serve hot.
